When you start making plans for your restaurant chair layout, it’s going to be essential that you think about using your space as effectively as possible. That doesn’t mean that you’ll want to layout all of your chairs in a sort of jigsaw puzzle layout; it only means that you’ll want to look at using height as well as width of the dining area. One way of doing that more effectively is to consider using barstools as well as traditional chairs.
Of course, that means that you’ll want to consider the possibility of adding some seating at counters as well as traditional tables - but that does open up the possibility of using otherwise wasted space.
For example, if you have a hallway that is wide but otherwise unused, why not line the wall with a narrow counter and add a couple of barstools? For some of your diners, this will create an element of privacy that they may be looking for and unable to find elsewhere. Likewise, placing a narrow counter around a support post can also help to make use of space that otherwise would be unused - you can create more seating and find less wasted space as well.
