You need to be careful when designing your restaurant booths layout as booths themselves can come in a variety of sizes. Where many restaurant owners get caught out is in selecting the tables that sit between the two booths.
Booths range in size from 30″ to 72″. The catch is whether or not you use straight booths, or L-shaped booths. If you use a 72″ L-shape, is that the length on one side, or the total length of the L? If you were to buy a 72″ table, you may find it sticks out into the walkway by 30″ or more.
Restaurant tables for booths should be an inch or so shorter than the booth itself. This enables easier entry and exits for your customers. If you are using two L-shaped booths together, essentially forming a U, you will then need to consider squarer tables rather than rectangles. Again, length will be important but so too will width.
If you are using a banquet style restaurant booths layout then the equation changes again. You can have many smaller tables, or fewer longer tables. Just be aware that the longer a table is, the harder it is for diners to get in and out.
Restaurant booths are making a comeback in many restaurants mainly due to their popularity amongst casual diners. If your restaurant caters to casual diners then you may want to consider using booths. If you do, make sure your restaurant booths layout includes tables that are suitably sized for those booths.
